The company i work for doesnt like the idea of collected data being saved on an overseas server - can the form email the form results but not save the data to the database?

First of all, thank you for choosing JotForm.
Unfortunately, it is not possible to prevent JotForm from storing the form's data after submitting it . But rest assured that your data belongs to you and we do not share or sell any user data. We also do not access your data for any non-administrative purposes.
However, if you really prefer not to store your data from any external DB, you can alter your forms code and house it in your own servers. You might also want to delete the submissions in your JotForm account after receiving the notifications, but I would not recommend it because once you've deleted the file from your account, any link regarding the submission sent to your email will be rendered as null.
I hope this helps.
