We would like to offer our customers the ability to send us their updated credit card information via a form. There is not a purchase that would be immediately tied to the update. Are we able to have credit card entry information on an imformational update form and have it sent securely?

Unfortunately, creating such kind of form is not allowed by JotForm. It is a direct violation of JotForm's Terms Of Service specifically the Phishing clause as stated.
Phishing You agree that Company may terminate your JotForm Service immediately if a form is created or JotForm is found to be used to: Obtain credit cards sensitive information, show content with child pornography, make login forms to steal user credentials. All these activities are considered as Phishing and any account along with the guilty forms will be suspended immediately
There is an anti-phishing system in placed, so it will always auto suspend the account and forms every time it detects that a form have components that collect info on CC.
I suggest to use the payment tools for such requirement.
