You can achieve this functionality by using edit submissions on a later date.

You can set auto responder email for users who will submit form. That Autoresponder email will have Edit link for the submission.

Check Guide: Setting up Autoresponder Email

When they receive a Package they can go to the edit link and update their submission and sign and confirm.

You can also Show/Hide specific fields on Edit Submission: https://www.jotform.com/help/389-how-to-show-or-hide-fields-on-edit-url/

You can show the sign field on submission edit link.
