Is there a way to track in-person ticket sales (where I've collected cash or check in our office) through my JotForm for my own singular record-keeping?

Sure you can.
Just create a form that helps you record each ticket sale - you may name the form based on the method of payment.
You can track the results using a number of ways:
1. View them in the submission panel and create reports
2. Export to Google Spreadsheet and analyze the sales there
3. Export an excel spreadsheet to dropbox
Among others.
Perhaps if you elaborated in what you would like to track - and the method in which you would want the results displayed - we can reccomend more useful ways of traking your ticket sales using your form.

Understood.
How about adding additional fields to the form (do not delete any existing fields on the form - you will lose the data as well) that will be used to track cash sales and other modes of payment?
