I activated the hide empty fields on email and the empty fields still show up in the emails sent or received
What di I do wrong?

Upon checking your form "Bon de commande", I found that you have edited your notification email alert.
Please be noted that "Hide Empty Fields on Emails" only works with unedited notification email alert. If you edit the email template, it becomes dirty and the hide empty fields on emails feature will not work.
I would suggest you to create a new email alert and ensure that you do not "Unlock data table" and the feature will work as expected. Please check the screenshot below:
