I accidently deleted the default email (which was my profile email) and I do not know how to undo this mistake. Please advise.

If you want to add it back as a custom sender email, please follow this guide: http://www.jotform.com/help/238-How-to-Add-a-Custom-Sender-Address-to-an-Email-Alert
If you want to change your account email address, just simply access your My Account - Profile page: http://www.jotform.com/myaccount/profile and change it from there.
