We'd like to build a "web app" for the iPad and/or iPhone with Jotform, but it would really be nice to support one of the touch-friendly widgets like the vertically scrolling pick list used for time & calendar functions, or a horizontal slider bar. I know these are not in the core tools, but is there are a way to fake it with some javascript or CSS or .... something?

You might wanna try the iOS7 list widget. You will be needing a JSON structure, save it on your webhost then paste the URL on the iOS7 list wizard.
