can the data be automatically sorted into columns in excel?

Yes, you can collate all submissions made through your form using the Export to Excel feature. Just go to your form's submissions page and look for this button:
Each field will be sorted and given its own column.
Furthermore, using Excel's built in sort and filter functions, you can group entries of the same kind together, for example same state or same color preference. You can also arrange in alphabetically or numerically in ascenting or descending order.
