I have several fields where it is required for them to select one option and ONLY one option. However, despite having the minimum and maximum selections set at one the preview form allows me to check as many fields as I want. No message about too many or not enough. This is imperative to the form's usefulness by the end user. Please advise. Thank you!

I'm sorry for the trouble caused to you.
I am unable to replicate the issue you are having. I created a test form and it seems that the "Minimum Selections" and "Maximum Selections" of the checkbox fields is workings as expected. Please check the screenshot below:
I did check your last edited form "Track Day Bike Registration" and found that it is working as expected. Please check the screenshot below:
I would suggest you to please test it again and get back to us with the form ID in which this feature is not working. We will take a look.
