Would it be possible to create a notification email using one of the INin templates to form fillers?
I find the current email layout immensely limiting in style, and you have to do so much to the design of it to get rid of address tags etc.

If I understand your question correctly, you want to change the style of your notification email template. Is that correct?
You should be able to customize the email template without any issue. Please be noted that you can also copy and paste your own HTML code in the email alert. Please check the screenshot below on how to add your own HTML code:
Please be noted that once you add your own HTML code, you will have to add your form field to display the form submission data. You can add the form field by clicking on the "Form Fields" section of your email template.
Will that not help you customize the look of your email template?
