How can I cap the number of submissions on a form?

My form is an event registration with multiple event options. Each event needs to be capped at a specific numbers of registrants. Is this possible?

Further explanation: only "x" amount of  people can select "x" as the option (day) they want.

It sounds like our appointment widget should be able to help you accomplish exactly what you need.  With it, you will be able to setup up certain dates and only allow a certain amount of people to sign up for each date.  Here is a link to the widget:
