Hi,
We get an odd email come through from a user but it doesn't have the email address included? But on the form we have set this as a "required" field, how does that happen?

It is because you are using a "Text Box" field which validation is set to "None". If you are going to use a "Text Box" field make sure to choose a correct validation base on your requirement so in this case choose the validation as "Email".
You can use "Email" field under "Quick Tools" so that it will automatically validate the field as email.
