Hi I was just wondering - for the free account - what exactly does 100 mb available space mean? Is this per month? How much space would a form usually take up? I need to have a form with probably 6 text feilds than 2 uploads (less than 2 mb) but I'm concered that will reach the limit too quickly... Any additional info would be great. Thanks!

The 100MB storage limitation for free accounts refers to the space taken by the files uploaded on your forms. This limit is not a per month basis but rather a maximum capacity for your account.
In the event that your account reaches this limit, your forms will be disabled for the remaining days of the month. It will get re-enabled on the succeeding month, but only if you keep your storage below the limit by deleting submissions that contain uploaded files.
A good habit to prevent your forms from getting disabled is to regularly check your account status and to delete submissions with large files. You may integrate a form with Dropbox anyway, so you can have a backup of these submissions and file uploads.

Let's imagine that I reach the 1000 submmisions in 20 days. Could I pay again in that moment to re-activate the service for another 1000 new more submmisions ?. Thank you

We're sorry but no, we don't have reactivation option or plan, once you reach your monthly submissions limit on your Premium Subscription, it is either you have to wait for the next month or upgrade to Professional subcription.
