How come once someone fills out the form and hits submit when it gets emailed to me it doesn't show the logo I had on top of the form?

Please be noted that when the form is submitted, the images and contents of "Text" fields are not part of the submissions. That is the reason why your logo is not being displayed in the submission emails you receive.
If you want to display your logo in the submission emails, you need to manually add it in your form's notification email template. Please check the screenshot below on how to add your logo in the email template:
