I believe this is caused when you set up the sender email to be the exact same as the email you're sending it to. So, in your account I see the sender email is sales@growth-flex, and thus when you receive an email from that sender the email provider changes it to "me." I've typically seen this with Gmail.
As a test, you can send yourself an email from that inbox, and when you receive it it will also use Me.
If it bothers you, feel free to change the sender email to anything other than the recipient email. As a side note, you're the only person that will see the "Me" as you're the only person with that email address.
