When you say "record submission email addresses", meaning, you want to save the email addresses of the submitter? Where? Do you want to store it somewhere or just simply save it?

Yes, I want to save submitter addresses but more importantly would like to
associate that address with the form. My client used another 3rd party
software previously, and he was able to see the submitter in the "sender"
field in his AOL inbox, which made it easier for him to keep track of
things. Can this be done with JotForm? Thanks!
Yes, but you need to use Mandrill's SMTP for that purpose: https://www.jotform.com/help/240-Set-Email-Field-as-the-Notification-Sender-Email-Address-with-Mandrill. We've put a note on top on this guide about DMARC authentication. AOL may have done the same so instead of using AOL, I would advise using Gmail or a custom one.
