I have changed my payment type to be Paypal express and believe I have entered all of the correct API data.
Is there a more thorough guide to trouble shooting exactly why the button does not exist and whether there is a fault?

I checked through your forms and was able to see a submit button in all of them. Could you let us know which form specifically you are having trouble with and if it is embedded to a web page? With this information we should be able to help you get your form looking the way you want. Simply changing the payment method of your form should not hide the submit button though.
