When setting up email notifications and testing emails, the from keeps going to my account email.

You must have been doing the test email using the Test Email button in the Notification Email.
To actually received submission emails to the assigned Recipient E-mail address, you must submit the form in actual.
The Test Email button will only always send the test message/email to your own account email.
