Is email the only way to collect form data?
Is it possible to create PDFs of a completed form, or to export form data to a sreadsheet?

There are many options to collect and preview the submitted data and the emails are just one of them. :)
Each time a form is submitted you get an email if you set it like that, but you always get a submission entry created for you. When you want to see it, just click on a jotform that has submissions and click submissions button.
There are truly many options in submissions alone so each time you can not find how to do something, just let us know and we will help you with that.
Now you can also use our reports button instead of going to submissions first.
