How do I alter the date/time stamp for submissions?

I am in Iowa, and currently, submissions are not being date/time stamped according to central standard time (it appears to be Eastern Standard Time as it shows a time an hour later than our own).  Is there a way I can reformat this feature to reflect our local time?
