I have multiple persons being notified on many of my forms.
But I noticed some of them show the emaill address of all the persons being notified and others only show one (ME)
How does that work.

I checked one of your forms and the addresses in your notification were being separated by a ";" rather than by a ",". They should be separate by comma and not a semi-colon. This may be what is causing the odd behavior. I am actually surprised that all of the people in the notification are receiving the email at all. Replacing the semi-colons separating the notification addresses with a comma, should allow for separate emails to be sent to each, rather than all the names being placed into each.
If this does not resolve the issue of multiple addresses in the same email, let us know and we will be happy to look into this further.
