Is there a way of using the Unique ID in a calculation and a way of showing the Unique ID on the form?

If you use the Unique ID widget then, no. It can only be added to jotform to provide you a unique ID of every person/form submission in a way that would match your already existing documents.
It is not designed to be placed into form calculations nor it can be gained over conditions.
I will however raise this to our developers as a possible feature so they will take a look at let you know through this thread if it would be implemented.

To answer your other question, it would not be possible to make its value shown to your visitors because of the same limitations.
Now if you really need this the only manner to have it working the way you want is by embedding the jotform using the source code embed method and then adding the code for that manually.
