How to have Paypal Purchase for a set period of time in JotForm

2) I know I can set up payments, but I want the payments to be to purchase "use" of the form contents (wedding ceremony selections) for a period of time; ideally for up to one year, for couples to be able to work on completing the long form to write their wedding ceremony as they plan their wedding. They would come back to the form at will and make selections, etc.  Is there a way to accomplish this with jotform?  In other words can someone make a PayPal purchase that would allow them to use the contents for a set period of time?

I apologize but I don't fully understand your question.
Do you mean that you want to create something like a subscription? If this is correct, please refer to this guide: http://www.jotform.com/help/166-How-to-setup-a-recurring-payment-option

But, keep in mind that the mentions guide will help you to make recurrent payments which means that the validation part (in order to allow your customers to fill the form) would need to be made in your website, maybe you could provide your customers with a user/password that allows them to access the form for a year. In this scenario you would have to embed the form in your website to control who can access it.
