Some of our filled out forms don't show the input value in the email. This is what it shows, and I have re-created the form several times. Usually one field shows ok, but the rest don't. I just don't think I am doing anything wrong. Would upgrading help? I am hesitant to upgrade if this will be a constant issue.... Thanks so much.

You should probably just reset the email. Click on "Delete Email" button on the email wizard and re-create it.
