More than 100 submissions in a month; what will happened to the submissions after the 100 submissions?

When you exceed the number of submissions, your forms will stop and wait for the remaining days until the counter is reseted to zero. Furthermore, you wouldn't be able to get any submissions. Here is a more detailed explanation from Neil if you want more information.

Does that mean if 140 participants respond to the survey, I will only get the first 100 submissions, and the remaining 40 completed surveys will not be received until the following month?

It means that after 100 submissions your forms will be disabled so your participants will not be able to see or submit your forms until the remaining days. In Neil's article above, there are some tips that may be useful for you and I think that will answer all the questions on your mind. If you have further questions please ask :)

By the way, while previewing the survey, I did 2 tests and submitted the form to view the "Thank You" message. But it now shows that I have 2/100 submissions.
How do I get rid of my 2 tests submissions? I don't want my tests to be reflected in the final results.

There is no way to get rid of your 2 test submissions. Here is a more detailed answer from mliz and abajan for the reasons why you can't do it.

If thats the case, i'd like to upgrade to the premium form for one month only. However, when i click to upgrade/purchase; it states recurring monthly subscription.
Am i able to purchase for just one month? And how do i go about doing it?

You can upgrade your subscription on a monthly basis, once you go to http://www.jotform.com/pricing select the package you wish to upgrade to the next page would show the option to select per month billing period.
