I am making an application for students to apply to a writing program. Students must submit 2 pieces of writing (created in MS Word) as separate files. We are expecting about 30 students to apply. Is 100 MB enough space for, at minimum, 60 MS Word documents?

That would depend mostly on what kind of documents they will be providing.
Since you said writing program, I presume that this would be just text in which case each file should be way under 1MB in size even if 20 pages long.
If they add photos it would depend on the size of the photos, but I believe that you would be able to get over 200 MB for just text documents without any problems.
Again, this all depends on the actual documents, but you can take a look at the space that you have used up when you get 10 submissions and take that as an average.
I would however suggest creating a Free account with us when collecting submissions so that you can always find your jotform and submissions behind your username and password, no matter what device. I only suggest this since I see that you are on a guest account and that means that clearing cache or cookies could result to you not being able to find the jotform afterwards.
