Appoint Time Going to Monday is 1 Hour Off

I created a form with an appointment field that synced perfectly to Monday using a hidden time field. Suddenly (maybe with the daylight savings time change, not sure) the hidden field is getting set with a time 1 hour prior to the appointment, so Monday is off too. I check to ensure the time zones are aligned, and they all seem to be set to Central Time/Chicago. What is breaking here?
