How can I have the client enter an e-mail in the form? I'm looking for a way to get their e-mail so I can reply once they submit an order on the purchase order.

To collect emails from the people filling out your jotforms you should add the E-Mail field on the jotform.
To do that, you should click on the Quick Tools and then E-Mail field and just drag-n-drop to the jotform at the position you want it at.
