Is this possible to use different email templates for a from owner and a form user

Okay would it be possible to "hide" that text so that I get in the email
but the customer does not see it on the form?

We have two types of the form email alerts.

1) Email Notifications to the specified recipient(s). It is usually a form owner's email.

2) Email Autoresponders to the form users.

Both types of email alerts have separate email templates, so you can have different content on the emails to you and to your customers.
