The payment tool is considered as one field, if you wish to update the details associated with the tool such as the merchant id or paypal email address depending on what you are using you can do this by simply clicking on the Payment Wizard settings icon in the field.
Once you click on it this will pull up the Payment Wizard window and from there you can update the related data.
If what you want to do is completely change the payment tool used such as from Authorize.net to Paypal payment just click on the 'X' icon in the payment field. Once you delete it you will be prompted to keep all products related with the Paymen tool:
"Would you like to keep the products to be used with another payment gateway?"
Just click on 'Ok' and once you add the new payment tool the products which were associated with the previous payment will be automatically pre populated.
