I am capturing a Social Security Number. Should I use a text field? Will it be securely submitted to the database on the server?

You can use either text box, number, or text box with input mask so you can limit the number of digits or format your require.
You can use secure embed codes if security is a concern. This transmits the submissions securely to the Jotform servers with 128 bit SSL encryption.
