I'm receiving my submissions, but starting Sunday January 11th, all of the information is not showing on any of my submissions. I did not change any rules or anything in this time frame...
The only information showing up is their name, address etc., not any of the items they have chosen to order

I was able to replicate the issue that you are referring to. As I check the issue, I see that there is something related to the fields of pickup time. By disabling these two fields in the submissions view, I was able to view the rest of the form submission data.
However, you should be able to see the complete data by downloading to Excel of PDF without disabling these fields. Let me check on this and get back to you with relevant information.
On the other hand, I see that you are collecting cc information using normal text fields which is not secure and not allowed through JotForm. Such forms are considered as phishing forms and may result in suspending your account. Please go through our terms of usage and request you to delete these fields immediately on this JotForm and others if any. You may use one of our payment integrations to receive payments securely and as per the PCI standards.
