I am wondering if you can set it up so that on submission a pdf version of the contract is emailed to the client?

This is possible to add an Email Autoresponder to the form, and include a submission PDF download link into email body.
Also, you will need to enable a 'Show headers and Texts' option to include the text information into PDFs in this case. It can be done from Submissions page.
The form user will be able to click on the PDF link to download their entry in the PDF format.
