1 - I can't change the email adress for new submission. I click on "Couriel -> I write the email du destinataire = firstname.lastname@example.org and when I click on Tester l'e-mail, the pop up window tell me : Test email sent to default email address: email@example.com.
Any way, even on the adress firstname.lastname@example.org, I receive the Test e-mail, but nothing when people submit informations.
2 - THE MOST IMPORTANT
THE SUBMIT BUTTON "VALIDER", WORK PERFECTLY ON COMPUTER BUT DOES NOT APPEAR ON PHONE AND TABLET

Based on what you have mentioned I presume that you have been clicking on the Test email button and that you got a confirmation that the email was sent, only to find the email in the email associated with your account and not in the one you have already set.
The reason for this is because all of the test emails are always sent to the email that is associated with the account, regardless of the email placed in the notifier.
To test if the test notification is sent properly, you would need to make a submission instead.
Also, I have found that the email: email@example.com was in the bounce list so I have removed it and you should now be able to get the emails.
