Is there a way to export this information in a way that does not use the comma as the delimiter?

Unfortunately, JotForm in its current form doesnt allow user specified delimiters when exporting submissions to csv format.
I could pass it on to the developers as a feature request. Its just not a request I have seen before, so its unlikely to be priotised.
Can I ask you why you want to use a specified delimiter?

We are hoping to take the data exported from jotforms and imported into a tracker in our own database. The use of csv, especially in the case of addresses that utilize suite #'s or apartment #'s where people often use commas would throw off the entire excel table by one column based on whether or not the comma is used. In this case I selected the pipe because it would most likely never be used on any of Jotform questions.
Thank you very much in advance for your time.

Having worked with data collection, I understand how useful it would be to be able to specify the delimiting character when exporting a CSV-formatted database file. With that in mind, I have forwarded your request to our developers.
Take note, however, that requests do not get granted so easily, especially since the current workload of our developers is quite heavy. In any case, we will let you know if there is any movement on the status of your request.
