I've created forms that have fields that are not required, and when the form is submitted, the information sent to my email is ONLY the required info-
How do we get all fields, required and non required, to get sent to our personal email, and not just as a submission on JotForm?

I've checked your form and it seems your notification emails are not updated with the new fields that are present in your form. The best way to fix that is to re-create your form notification email.
1. Delete the existing ones by following this guide: http://www.jotform.com/help/132-How-to-Delete-Notifications-Autoresponder.
2. Re-create the whole settings: http://www.jotform.com/help/25-Setting-Up-Email-Notifications.
