I run a non-profit softball league, and this would be for weekly score submissions. I want them to receive a copy, either by including their email address in a text box, or by choosing it from a pull-down menu. Is this possible?

The subject of the thread is suggesting to me that you would like to download all of the submissions ever made in Excel format, while the body of your thread is suggesting that you would like to receive a weekly email with the submissions made at that week.
Now I presume that you are after the weekly notifier of all submissions made that week and for that you would need to use the Daily Digest app.Do let us know if that is not what you meant.

I'd like to be able to extract an Excel version of the submissions from my JotForm account. I have to tabulate numbers for a three month season, and would prefer to avoid manual extraction of the data.I'd like each coach to be able to have a copy/confirmation of their submission each week that they submit their team's scores.

I would recommend this guide to see how to download the Excel file of the made submissions per the defined time range: How to Partially Download Form Submissions as Excel/CSV/PDF?
You would need to download it yourself and you can then send it to multiple people over your email, but there is no way to share it with them, unless, you share the submissions page - which will allow them to see all submissions: How to Share Form's Submissions Page
