We want to start utilizing our jotform this week. Is there something I should be doing to make sure it's secure (adding something, turning something on, etc?). How do I know or customers know that their information is secure? I'm a little worried about using this. Please help.

I would suggest you to register for free in order to increase your monthly submission limit and also receive useful information about our system. If you use the same email address that you're using in your guest account then your form will be automatically transferred to your new account.
If I understand correctly, you want to use the secure version of your form. To do this, you need to enable SSL submissions in your form. However, you need to consider that free accounts are only allowed to receive 10 SSL submissions per month, in you're planning on receiving more you should consider upgrading your account to a paid plan.
