I am looking for a long term solution to gather entry details but also options regarding long lists of classes -- like 50 to 350 entry options. I hope to be able to build the master form in excel or as a pdf then import fields to jotforms. is that possible with that quantity of fields?

I'm not sure if I understand your query correctly. Are you looking for importing some existing forms to JotForm? If so, the form tags needs to be present in order to import it from the URL. Once you have the form created using JotForm, you can import the existing data to JotForm by using our Import Data app. Unfortunately, it is not possible to import fields to JotForm using excel or pdf.
Since JotForm is not restricting any number of fields on each form, I don't think this can be an issue. However, having such long list of fields or options on a form might take more resources of the browser and can take some time to load the form completely.
