User contributed drop down- make first option non-selectable

I have several user contributed drop downs on my form, and the first option in the list directs them to select an item from the list.

Some submissions are coming back with that default option as the answer on the form instead of one of the desired answers from the remainder of the list.

Is there a way to exclude the first line /option that indicates to select an item from the list from being a selectable option when submitting the form?
