The forms I use are parents registering their kids for a camp. The contact details for parents etc. will stay the same, but things like the name/age of child will change. Is there a way I can set it up so that when a parent is registering more than one child they can submit a form but keep all the data on it and just change a few things?

Yes it is possible to achieve your requirement. You can take advantage of our "URL Parameter" feature to pre-populate your form fields. Here are the steps you should follow:
1. Garb your form's URL with parameter for the fields which you want to retain. The following guide should help you: http://www.jotform.com/help/71-Prepopulating-fields-to-your-JotForm-via-URL-parameters
2. Find the "Field names" of your form field whose value you want to retain. The following guide should help you: http://www.jotform.com/help/146-How-to-find-Field-IDs-Names
Example URL of your form where I have pre-populated few fields : http://www.jotform.co/form/31276410074850?streetNumber37={streetNumber37}&streetName={streetName}&suburb={suburb}&town={town}&postcode={postcode}&emailAddress24={emailAddress24}
3. Set this URL in the "Custom URL" of the thank you setting of your form. The following guide should help you: http://www.jotform.com/help/38-Redirecting-Users-to-a-Different-Page
Now when the form is submitted, users will be redirected to same form with the fields pre-populated with previous values.
