Hi, I am looking to do some sort of pending status with paypal. I don't want to automatically charge the customer, until the product has been shipped. Is there a way to do this? Thanks...

I see that you basically want to be able to charge customers later with paypal.
There is actually an option for this that is already apart of paypal called "Bill Me Later".
You can read more about it here:
As far as I know this works with any jotform and the use of one of our PayPal Integration Tools. The only downside to it is that you will not know when your customers are actually using it according to PayPal. Additionally though, as far as I know there is no way to "create a manual delay" for it since we do not allow this information to be held on our end for security reasons.

Actually, "Bill Me Later" Is not what I am looking for. With "Bill Me Later", the customer is still paying up front, but they are not being charged by PayPal right away. For Valentines Day, I ordered flowers from ProFlowers.com using PayPal as payment. They put my payment in a pending status, then when the flowers was shipped, the payment was finalized. I was looking to do the exact same thing. Please advise if this option is available here, Thanks!!

I'm not sure if this is the one that you are looking for, but please check this guide that we have: http://www.jotform.com/help/292-How-to-Enable-Payment-Authorization. It is about enabling Payment authorization option in different Payment tools that we have. This will let you charge the customers after authorizing it, let's say you are shipping a product and you will only accept payments if you have prepared the product for shipping or if there's available stock.
I hope it helps.
