For example, if the form asks for a total number of participants, and then asks for a breakdown by male and female, is it possible to generate an error or warning that the total number of male and females is greater (or less) than the total number of participants?

If you would like to perform conditional logic like "if number of males is greater than females then...", yes it is possible. You can find more about it here: http://www.jotform.com/help/57-Smart-Forms-Using-Conditional-Logic. You can show or hide a "Text" field that will act as an error message, when the condition is met or not, you may also need to use the Form Calculation widget to get the total number of males and females then compare it to the total number of participants that you have.
Just make sure that the input fields are a number type field so that you can compare values.
