I see that you were using customize email template in your Autoresponder E-mail.
The date field is probably not linked anymore due to the customization.
But can you please try first the process of removing and adding back the Date field to the email template. See the screenshot below for guidance
Hopefully this will re-attached the data link to the email.
Test again the submission email if it now includes the current date data.
Let us know if the issue is not resolved.
