Email notifications have different layouts from the forms. The pre-defined version is meant to display the answers so they do not preserve the same layout.
But if you wish it is possible to customize it by using the editor tools:
If you edit the table where the answers are, the email notification will stop updating itself. This means that if you add/remove a field, you need to manually add/remove it from the email notification.
