I want to insert in a field (send to) with different emails linked to each department. And the chosen email will be the adressee to send the form.

There is possibility to make conditions on your form.
Inside of your form you can add for example Drop Down list with options that will represent the names of your departments. After that you can make conditions inside of your form for each department and based on what is selected and if conditions are satisfied mail will be sent to email address of appropriate department which is defined in condition.
For example i created drop down with 3 options.
Then select Condition option inside of your Form Builder.
After that i created conditions for each option.
In this case i had 3 conditions created.
