What happens if we upgrade to Premium account an find out we need more GB usage only 1 month. Do you charge more per extra MB or just block the service until the next tier is bought?
We don't want any interruption in service of our form. Thank you.

Anytime you go over your account limits you will receive a notification that you have done so. You will then have 2-3 days to upgrade your account to the next tier in order to keep your forms active. If you do not upgrade, the forms will indeed be disabled until the 1st of the next month.
For storage space however, you can simply delete the submissions associated with the files to free up more space. It is not a bandwidth limitation. You could have your submissions sent to Dropbox or something similar:
Then delete the submissions from your JotForm account to free up space.
