Is there any way of making this PDF password protected atall?

Hi,

Though this is not possible to do in Jotform, once the PDF is created I believe it is possible to do in a program such as Adobe Acrobat:

Though you cannot add a password to signed or certified documents and you do need a Pro or better version of Acrobat for this functionality. It is not available for the free version.
