have a way to set the coupon code to use one time only for every customer?

Just to confirm, you would like that the user who is filling out the form could only use the coupon code one or with a specific number of times? If that will be the case, are the indicators to identify the user is through using their email address or full name?
Example: If user1 filled out the form using the email address firstname.lastname@example.org and applied the coupon code, the next time that we will be filling out the form using the same email address he will not be able to use the coupon code again, is that right?
Unfortunately, this is not possible right now. The options for the coupon code are the following: Number of times it is used and Expiration date.
What you can use is manually adding a text box field for the coupon code and setting conditions to limit the submissions. You can learn more about the conditional logic here: http://www.jotform.com/help/57-Smart-Forms-Using-Conditional-Logic.
I will escalate this to our back end team as a feature request, unfortunately we cannot provide an expected date to when this will be implemented or even be considered.
