In a notification I can change from Text mode to HTML mode. However once i have done that i can not! switch back to Text mode anymore. Is there a way to do this?

Once you switch back to HTML mode the button for edit mode changes to "Use Text Mode" this is the same as Text mode, just click on it and you will be directed back to Text Mode.

I did already try that one. The thing is that if i initially start with a notification, a nice table is shown (with in the header Jotform). Now when i click the HTML button and again the Use Text Email button then the original text mode (table + header etc) has disappeared and won't return anymore. I've checked the notification e-mails but no table format anymore ...

Sorry for the inconvenience. In order to restore the table format of your e-mail notification, you have to delete your existing and recreate, that way it should give you another table format in visual mode.

This switching process is a bit of a "gotcha". Some kind of warning or instruction should be placed here. My first thoughts on clicking the Use Text Mode button or Use HTML button, was that I could simply view the code either way and make changes. But clicking actually permanently changes the code. Had to start all over several times because of this.

This issue has been bothering me since I started with JotForm. The behavior between switching modes is destructive and there is no warning. Ideally it should switch back to the exact original view going into the view so if you switch to text mode and then back to HTML youu will get the visual HTML mode back. Wouldn't you agree that in current form this is not good behavior? I got back into making some new forms and had to remember this bug otherwise you will lose your changes.

Actually I don't find it a bit difficult, personally. Please note that this is different with "HTML view to Visual view feature" where you can switch to visual view in order to execute your html formattings and switch back to HTML for source code editing. You can click on the HTML icon found on the upper toolbar in order to view your notification template source code.
HTML Visual to TEXT mode is different. When you switch to TEXT from Visual HML, you'll lose all your HTML formatting, meaning all html codes will be removed from it. So when you switch back to Visual HTML, you'll get the formatting toolbars except the previous template formatting since html's are removed from it. However, you can use the formatting toolbars to be able to recreate it or I'd suggest to delete and recreate your form notification for a new html template.
